Thomas and Anne Cabrol, with unique backgrounds as an oenologist (person who studies wine) and nurse, joined forces in 2012 to open a wine bar in Toulouse. Over the course of eight years, their bar earned numerous accolades, including three titles for the world's best wine bar. In 2020, they launched La Villa Pinewood, a guesthouse and restaurant nestled in Tarn region in the South of France. ZenchefOS became their preferred partner to navigate this new venture.
A tale of wild plants and wine The Michelin Guide has awarded La Villa Pinewood with both a red star and a green star, indicating that it surpasses the norm of traditional dining. Four nights a week, their "host counter" welcomes fourteen guests for oeno-gastronomic dinners at 7:30 pm, offering privileged moments.
The cuisine, which emanates ****from the plant world, results from an collaboration with local botanists and foragers. Trained in botany, Thomas imparts rare authenticity to each dish. The wine list, a product of ten years as wine merchants, complements this sensory journey with bold pairings by Anne.
"Coming to us is like attending a concert or theater. It's very different from a classic restaurant model. People gather at a Japanese-style counter. They focus on the evening, exchanging with each other and with us." From Bed and Breakfast to Exceptional Table Originally a bed and breakfast, La Villa Pinewood ultimately dedicated itself fully to the restaurant business. Today, a strategic partnership with nearby bed and breakfasts has been established. Hotels recommend La Villa Pinewood to their guests, and a private car company ensures their transfer.
"Today, we are focused on the table. Our guests are located 5 to 10 minutes around the house. A driver provides transportation for their convenience. Preparing the dishes takes all day, so it was complex to do the rooms, the service, the check-out, etc. Although hiring was an option, we preferred to avoid having employees at our home”
